Five Perfect Sides for Pork Chops

Any way you want to spin it–on the grill, on the stove, and/or in the oven–a well-prepared [bone-in] pork chop can’t be beat. If you have chops planned on your upcoming dinner rotation, here’s a few suggestions for how to fill out the plate like a pro:

Curried Potato Salad
Everyone knows summer is the unofficial season of potato salad, but we’re kind of over the same old same old. Incorporating madras curry powder adds a kick of toastiness that just so happens to pair especially well with juicy chops.

Green Bean, Arugula, and Clementine Toss
Borderline too easy to throw together and loaded up on bright fresh flavor, this simple salad-like side is a favorite for most any light animal protein–like chicken, pork, or fish. But it’s especially lovable next to pork because of  those sweet little clementines. They get along really well with seared pork, just FYI.

Creamed Corn with Bacon and Leeks
OK, yes, pork chops plus a bacon-studded side dish may sound like a pork-on-pork overload. If you genuinely feel that way: A. I’m sorry we’ll probably never be friends. B. Please think on it a little harder. And if you still feel strongly, no worries–leave the bacon out and use butter in place of the drippings. Sweet buttery corn teamed up with savory leek isn’t going to leave anyone wanting for flavor love.

Cranberry Beans with Parsley Pesto
Pork-and-Beans is a thing for a reason–embrace it. Fresh cranberry beans are super creamy and delightful, but if you don’t have them on hand or have trouble tracking them down, you can swap them for pinto beans. This dish is exceptionally tasty with smoky grilled chops.
