It Will Waffle! 4 Fun Recipes To Transform Your Waffle Maker

Waffle (n): Saturday morning breakfast / crispy, golden pancakes with ridges / strictly limited to butter and syrup toppings, perhaps fresh fruit.

Forget any preconceived notions of the above definition having any valid truth! The humble waffle is no longer subjected to maple syrup, just being golden, or even being served only as breakfast.

Presenting: It Will Waffle! An exploration of waffles and their unlimited possibilities. From brownies to mashed potatoes, I explored some of the best ways to waffle your food. There are endless options, no waffling about it. (Ha, get it?)

Get out the appliance you reserve for the weekend, and try some of these ideas for a fun weeknight meal or dessert. Great thing about it is each of these: the recipes come from Cooking Light! I’ve added instructions to adapt to the waffling process, and keep in mind each waffle maker is different. Trial and error here, friends! On to the waffles…

Brownie Waffle

Recipe: Fudgy Brownies

Prepare batter, through stirring in flour. Heat waffle maker to medium, waiting until the light indicates that the iron is ready. Generously spray both sides of the waffle maker with cooking spray, and pour 1/3 cup batter into the middle of the iron. Close the machine and wait 3-5 minutes. It’s okay to peek and make sure it’s ready closer to the end of 5 minutes. The waffle is ready when it comes out clean. This might take a few tries to perfect, but brownies are delicious any shape they come in! Be sure to spray the iron after each brownie. Enjoy with ice cream or straight up!

Ingredient Tip: Instead of adding dark chocolate chunks to the batter, try chopping the chocolate into much smaller pieces. Leave them out all together if you can. Or melt them in the microwave and drizzle onto finished brownie waffles. The waffle maker isn’t very friendly to big chocolate chunks.

Potato Waffle

Recipe: Garlic Mashed Potatoes

Cook potatoes and mix all ingredients together. Heat waffle maker to medium-high, waiting until the light indicates that the iron is ready. Spray each side of the iron with cooking spray. Spread about 1/2 cup mashed potatoes onto the bottom of the waffle iron, and cook for 5-6 minutes, or until crispy and golden. Top with Greek yogurt and chives.

Ingredient Tip: I added some chives and cheddar cheese to my potatoes, just for a fun variation. I also topped mine with 2% Greek yogurt, which tastes the same as rich sour cream.

Pretzel Waffle

Recipe: Soft Pretzels

Make waffle dough, through dividing dough into 12 portions. Heat waffle maker to medium-low, waiting until the light indicates that the iron is ready. Spray each side of the iron generously with cooking spray. Place pretzel dough into the middle of the iron and press closed. Cook 1-2 minutes, or until golden brown and chewy on the inside. Serve with sprinkled kosher salt or yellow mustard.

BLT Waffle

Recipe: Cornmeal Waffles

Make waffles through completion. Cut each waffle into 4 individual sections. Stir together 2 tablespoons canola mayo and 1 teaspoon sriracha. Spread evenly onto one side of each waffle section. Top two waffle sections with one slice of bacon, 2 tomato slices, and arugula. Top with remaining waffle sides, and enjoy!

Additional Ingredients: 2 slices bacon, 1 tomato, 2 ounces arugula, 2 tablespoons canola mayo, 1 teaspoon sriracha. Makes 2 sandwiches.
